Ingredients
½ cup each sliced celery and diced onion
2 tsp margarine
2 fish fillets (flounder, sole or scrod), ¼ pound each
2 large plum tomatoes, sliced
Dash each salt, white pepper and lemon juice
Method
In 8-inch microwavable pie plate combine celery, onion and margarine
and microwave on High (100%) for 2 minutes, until vegetables are
softened.
Stir vegetables to coat with margarine; arrange fish fillets
over vegetables.
Arrange tomato slices over fish and then sprinkle with
salt, pepper and lemon juice.
Microwave on Medium-High (70%) for 3
minutes, rotating pie plate ½ turn halfway through cooking, until fish
is cooked through and flakes easily when tested with a fork.
MAKES 2 SERVINGS.
Notes:
A microwave pie plate is a handy and
versatile utensil.
Besides its obvious use for pies, it's
great for microwaving foods that should be arranged in a circle with
longer-cooking areas toward the rim of the plate (such as broccoli
florets and chicken legs).
