Ingredients
¼ cup chopped red bell pepper
2 tbsp chopped onion
1 tsp olive or vegetable oil
4 ounces thawed frozen imitation fish
1 cup whole milk
2 eggs
3 tbsp instant nonfat dry milk powder
1/8 tsp white pepper
Dash ground nutmeg
2 ounces Muenster cheese, shredded, divided
4 tomato slices
Method

Spray 8-inch microwavable pie plate with nonstick cooking spray; add
bell pepper, onion and oil and stir to thoroughly coat.

Microwave on
High (100%) for 1 minute, until vegetables are tender.

Add imitation
fish and stir to combine; spread mixture over bottom of pie plate.

Using a wire whisk, in small mixing bowl beat together whole milk,
eggs, milk powder, pepper and nutmeg; stir in 1 ounce cheese.

Pour milk
mixture over fish mixture in pie plate; microwave on Medium-High (70%)
for 13 minutes, rotating pie plate ½ turn every 5 minutes, until quiche
is set.

Decoratively arrange tomato slices on quiche, sprinkle with
remaining 1 ounce cheese, and microwave on Medium-High for 2 minutes,
until cheese is melted.

Let stand for 5 minutes.
