Roulades of Fruit, Cheese and Ham

Ingredients

1 small pear (about 5 ounces), cored, pared and cut into 6 equal wedges
2 tbsp lemon juice
¼ cup part-skim ricotta cheese
1 ounce Stilton or Gorgonzola cheese, crumbled
1 tbsp each chopped chives and sour cream
2 ounces thinly sliced prosciutto (Italian-style ham), cut into 6 slices

Method
 

  • In small bowl combine pear wedges and lemon juice; set aside.

  • In small mixing bowl combine cheeses, chives and sour cream; set aside.

  • On work surface arrange one slice of prosciutto; spread 1/6 of the cheese mixture over surface of prosciutto and top with a pear wedge.

  • Starting from narrow end, roll prosciutto up jelly-roll fashion and arrange seam-side down on serving platter.

  • Repeat procedure 5 more times, making 5 more rolls.

  • MAKES 2 SERVINGS, 3 ROLLS EACH.
