Ingredients
1 tsp each vegetable oil and margarine
6 ounces pared all-purpose potatoes, thinly sliced
2 tbsp minced onion or scallion (green onion)
3 eggs
2 tbsp water
2 ounces cooked veal sausage links, thinly sliced
Method

Preheat oven to 425oF.

In 10-inch nonstick skillet that has an oven
safe or removable handle combine oil and margarine and heat until
margarine is melted; arrange potato slices in a single layer in bottom
of skillet and top with onion (or scallion).

Cover and cook over
medium-high heat, turning once, until potatoes are crisp and browned, 3
to 4 minutes.

In small mixing bowl beat together eggs and water, add egg mixture to
skillet and cook until bottom is set, 1 to 2 minutes.

Arrange sausage slices over eggs.

Transfer skillet to oven and bake
until eggs are set and golden brown, 8 to 10 minutes.
