Parmesan and Mixed Green Salad

To give this recipe a stronger cheese taste, rather than using grated Parmesan cheese, purchase a chunk of Parmesan cheese and shave it with a vegetable peeler. Grate any remaining cheese in a food processor and store in a resealable container in the refrigerator.

 

Ingredients
 

1 cup each torn radicchio (red chicory), Bibb, Boston and red leaf lettuce
2 ounces grated Parmesan cheese
1 tbsp each minced shallot or onion, balsamic or red wine vinegar and lemon juice
2 tsp each olive or vegetable oil and water
¼ tsp granulated sugar
Dash each salt and pepper

Method
 

  • In large salad bowl combine lettuce and cheese.

  • Using a wire whisk, in cup or small bowl combine remaining ingredients and beat until blended.

  • Pour dressing over salad and toss to coat.

  • Serve immediately.

  • MAKES 2 SERVINGS.
