Ingredients
2 slices whole wheat bread, toasted
1 tsp olive or vegetable oil
1 large plum tomato, sliced
2 ounces mozzarella cheese, shredded
1 tbsp chopped fresh basil
Dash pepper
Method

Onto 1 side of each slice of bread drizzle ½ tsp oil; top each slice of
bread with half of the tomato slices and 1 ounce cheese.

Sprinkle each
sandwich with 1½ tsp basil and
pepper.

Set sandwiches on microwavable plate or large paper plate;
cover with wax paper and microwave on Medium-High (70%) for 2 minutes,
until cheese is melted.
