Oatmeal-Raisin Cookies

Children and adults alike will enjoy these old-fashioned cookies.

 

Ingredients


1/3 cup plus 2 tsp all-purpose flour

1 1.2 ounce uncooked quick oats

2 tbsp dark raisins, chopped

1/8 tsp each baking sofa and ground cinnamon

2 tbsp each firmly packed light brown sugar and sweet whipped butter, softened

1 tbsp plus 1 tsp each granulated sugar and margarine

1 egg

1 tsp vanilla extract


Method

  • Preheat oven to 350 degree F.

  • In small mixing bowl combine flour, oats, raisins, baking soda, and cinnamon; set aside.

  • Using electric mixer on medium speed, in medium mixing bowl beat together brown sugar, butter, granulated sugar, and margarine until light and fluffy; add egg and vanilla and continue beating until combined.

  • Stir in oat mixture.

  • Spray nonstick cookie sheet with nonstick cooking spray and drop dough by tablespoonfuls onto sprayed sheet, forming 12 cookies and leaving a space of about 2 inches between each.

  • Bake until cookies are lightly browned and crisp, 8 to 10 minutes.
