Children and adults alike will enjoy
these old-fashioned cookies.
Ingredients
1/3 cup plus 2 tsp all-purpose flour
1 1.2 ounce uncooked quick oats
2 tbsp dark raisins, chopped
1/8 tsp each baking sofa and ground
cinnamon
2 tbsp each firmly packed light brown
sugar and sweet whipped butter, softened
1 tbsp plus 1 tsp each granulated sugar
and margarine
1 egg
1 tsp vanilla extract
Method
Preheat oven to 350 degree F.
In small mixing bowl combine flour, oats,
raisins, baking soda, and cinnamon; set aside.
Using electric mixer on medium speed, in
medium mixing bowl beat together brown sugar, butter, granulated sugar,
and margarine until light and fluffy; add egg and vanilla and continue
beating until combined.
Stir in oat mixture.
Spray nonstick cookie sheet with nonstick
cooking spray and drop dough by tablespoonfuls onto sprayed sheet,
forming 12 cookies and leaving a space of about 2 inches between each.
Bake until cookies are lightly browned
and crisp, 8 to 10 minutes.
