Keep this refreshing summertime dessert on hand in your freezer, but
watch out that the kids don't reach for it instead of ice cream.
Ingredients
1 cup each strawberries and raspberries
1 tbsp each granulated lemon juice
1/2 cup blueberries
Garnish: 4 mint sprigs
Method
In work bowl of food processor combine
all ingredients except blueberries and mint sprigs and process, using
on-off motion, until mixture is chunky (do not puree).
Transfer to 8x8x2-inch nonstick pan; stir
in blueberries.
Cover with plastic wrap and freeze for at
least 2 hours or overnight.
To serve, into each of 4 dessert dishes
spoon 1/4 of the berry mixture; garnish each portion with a mint sprig.
Notes:
Citrus fruits are not the only way to get
Vitamin C.
You will also find this important
vitamins in strawberries, cantaloupe, broccoli, tomatoes, cabbage and
peppers.
