Maple-Walnut Fruit Compote

Apples and pears are a happy combination in this tasty compote.

 

Ingredients


1/3 cup apple juice (no sugar added)

2 tsp maple syrup

1 tsp freshly squeezed lemon juice

1/2 tsp cornstarch

1 small McIntosh or Granny Smith apple (about 1/4 pound), cored and diced

1 small Bartlett pear (about 5 ounces0), cored and diced

1/2 ounce chopped walnuts

2 tbsp thawed frozen dairy whipped topping


Method

  • In 1-quart microwavable casserole combine apple juice, syrup, lemon juice and cornstarch and stir to dissolve cornstarch.

  • Add apple and pear and stir to combine.

  • Cover with vented plastic wrap and microwave on High (100%) for 4 minutes, rotating dish 1/2 turn halfway through cooking.

  • To serve, into each of 2 dessert dishes spoon half of the fruit mixture; top each with half of the walnuts and whipped topping.
