Flat parsley, sometimes called continental parsley, has more flavor than curly parsley. Parsley can be used to replace salt and is, therefore, a good seasoning for soups, sauces and many other dishes. It must be washed before use and is better not too finely chopped. Along with thyme and bay leaf, parsley makes up the bouquet garni and fines herbes preparations.
Parsley is used in soups; salads; coleslaw; meat, stews, fish, poultry; sauces; all vegetables; omelets; potatoes. Use alone or blended with other herbs.
