While the microwave oven can do many wonderful things for food, it
cannot sear, brown, or crisp unless you use a browning tray. This
specially coated tray is first placed in the microwave oven without the
food, where it absorbs microwave energy and becomes very hot. Browning
occurs when the food is placed on the preheated dish and microwaved.
Some microwave ovens come equipped with rotating turntables. If yours
does not, you can purchase a battery-operated or spring-wound turntable
to place on the floor of your microwave. With a turntable, food cooks
more evenly and there is no need to stop the cooking process and
manually rotate the food or dish. Many microwave ovens are equipped with a built-in probe
that is used to determine doneness. If your oven does not have this
built-in probe, you may want to invest in a microwave thermometer,
conventional thermometers cannot be used in the microwave oven. |
