Basil

Basil is a very delicate herb that gives a lovely warm, spice perfume to salads. It is always added to minestrone and goes well in fish soups. It is available in the warmer months of the year.

 

All tomato dishes, peas, squash, string beans, potatoes; French and Russian dressing or sprinkle over salads; bean, pea and beef soups, Manhattan chowder; broiled lamp chops, beef, lamb and veal stews; veal roasts; spaghetti sauce; scrambled eggs; in fricassees or with any poultry in tomato sauce.
