Thai Lettuce Wraps
Ingredients:
1 boneless, skinless chicken breast, chopped into small pieces
1 tsp vegetable oil
2 tbsp soy sauce
2 tbsp chopped onions
1 tbsp sugar
1 tbsp minced cilantro
1 1/2 tsp lime juice
1 clove garlic, minced
1/2 tsp grated ginger
1/4 tsp red pepper flakes
2 cups cooked rice
8 large lettuce leaves |

Method

In large skillet, heat oil.

Add chicken strips.

Saute chicken until done and no longer
pink.

In large bowl, combine soy sauce,
onion, sugar, cilantro, lime juice, garlic, ginger, and red pepper.

Mix well.

Add cooked chicken.

Place into the refrigerator for 1/2
hour.

Prepare rice according to package
directions.

Place lettuce leaves onto serving
plate.
-
Place rice in large bowl and chicken
mixture in another bowl.

Using lettuce leaves as wraps, top each
one with about 2 tbsp of the warm rice and a small spoonful of the
chicken mixture (along with sauce).

Wrap up and serve immediately.
