Thai Lettuce Wraps

Ingredients:

1 boneless, skinless chicken breast, chopped into small pieces

1 tsp vegetable oil

2 tbsp soy sauce

2 tbsp chopped onions

1 tbsp sugar

1 tbsp minced cilantro

1 1/2 tsp lime juice

1 clove garlic, minced

1/2 tsp grated ginger

1/4 tsp red pepper flakes

2 cups cooked rice

8 large lettuce leaves

Method

  • In large skillet, heat oil.

  • Add chicken strips.

  • Saute chicken until done and no longer pink.

  • In large bowl, combine soy sauce, onion, sugar, cilantro, lime juice, garlic, ginger, and red pepper.

  • Mix well.

  • Add cooked chicken.

  • Place into the refrigerator for 1/2 hour.

  • Prepare rice according to package directions.

  • Place lettuce leaves onto serving plate.

  • Place rice in large bowl and chicken mixture in another bowl.

  • Using lettuce leaves as wraps, top each one with about 2 tbsp of the warm rice and a small spoonful of the chicken mixture (along with sauce).

  • Wrap up and serve immediately.

  • Makes 4 servings.
