Southwestern Corn Bread "Stuffing"

To brown the prepared "stuffing", transfer it to a flameproof casserole and broil for 1 to 2 minutes.

 

Ingredients:

1/4 cup each chopped onion, celery, and red bell pepper

2 tbsp seeded and chopped mild or hot chili pepper

1 day-old corn muffin (2 ounces), cubed

1/4 cup water

1 tsp poultry seasoning

1 packet instant chicken broth and seasoning mix

Dash pepper


Method

  • Spray 1-quart microwavable casserole with nonstick cooking spray; add onion, celery, and peppers and microwave on High (100%) for 1 minute, until vegetables are softened.

  • Add remaining ingredients and stir until thoroughly combined; spread mixture evenly over bottom of casserole.

  • Cover with wax paper and microwave on High for 5 minutes, until liquid is absorbed.
