Sesame Noodles with Peppers & Pine Nuts

Ingredients:

8 ounces spaghetti noodles

1 tsp vegetable oil

1/2 red bell pepper, thinly sliced

1/4 cup green onions, thinly sliced

1 (14-ounce) can bean sprouts, drained

2 tbsp fresh basil, chopped

1 tbsp fresh cilantro, chopped

2 tbsp pine nuts

 

Dressings:

1/4 cup lime juice

3 tbsp soy sauce

1 tbsp brown sugar

1 tbsp water

1 tbsp sesame oil

1 tsp ground ginger

2 garlic cloves, minced

dash red pepper flakes

Method

  • Prepare spaghetti noodles according to package directions.

  • Drain.

  • In a large skillet, heat vegetable oil.

  • Add red bell pepper and onion.

  • Saute until slightly tender.

  • Add drained bean sprouts and spaghetti noodles.

  • Remove from heat.

  • Toss with basil, cilantro, and pine nuts.

  • Combine dressing ingredients.

  • Mix well.

  • Pour spaghetti mixture into a large bowl.

  • Toss with dressing,

  • Serve slightly warm or cold.

  • Makes 6 servings.
