Salmon and Pasta Salad

If tuna is more to your liking, drained canned tuna can be substituted for the salmon.

 

Ingredients:

1 /4 cup plain low-fat yogurt

1 tbsp plus 1 tsp reduced-calorie mayonnaise

1 tbsp lemon juice

1 tsp chopped fresh basil or 1/4 tsp basil leaves

Dash each oregano leaves, salt, and pepper

1 cup cooked ditalini or small shell macaroni (hot)

4 ounces drained canned salmon, flaked

1/2 cup each sliced celery, diced red bell pepper, and diced red onion


Method

  • In medium mixing bowl combine yogurt, mayonnaise, lemon juice, basil, oregano, salt, and pepper and stir to combine.

  • Add remaining ingredients and toss to coat.

  • Serve immediately or cover and refrigerate until ready to serve.

  • Stir again just before serving.
