Salmon Fettuccini

Ingredients:

1 pound fettuccini noodles (can also use other pasta, like bow ties)

2 tbsp margarine

2 green onions, finely chopped

1 pound skinless salmon fillet, cut into chunks

2 tbsp lemon juice

salt and pepper to taste

1 cup frozen baby peas

1 tsp dill weed

2 tbsp Parmesan cheese

Method

  • Prepare pasta according to package directions.

  • Drain.

  • In large skillet, melt margarine over medium heat.

  • Add onions, salmon chuckns, lemon juice, and salt and pepper.

  • Cook about 3 to 5 minutes until salmon is cooked throughout and no longer opaque.

  • Add 1/4 cup water and the peas.

  • Heat until water evaporates and peas are cooked.

  • Toss with drained fettuccini.

  • Sprinkle with dill and Parmesan cheese to serve.

  • Makes 6 servings.
