Pasta Slaw

While the spaghetti is cooking, you will have time to prepare the vegetables and dressing.

 

Ingredients:

1 cup cooked thin spaghetti (hot)

1 cup each finely shredded green cabbage and carrots

1/2 cup each diced red bell pepper and red onion

1 small garlic clove, minced

1 tbsp each chopped fresh parsley, lemon juice and balsamic, red wine or apple cider vinegar

2 tsp olive or vegetable oil

1/4 tsp each oregano leaves, salt and pepper


Method

  • In medium salad bowl combine spaghetti, vegetables, and garlic.

  • Using a fork, in cup or small bowl combine ingredients and stir to combine.

  • Pour dressing over spaghetti-vegetable mixture and toss to coat.
