Pasta Primevera

Ingredients:

8 ounces linguini noodles

2 tbsp oil

2 garlic cloves, minced

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

2 small zucchini, thinly sliced

4 ounces fresh snow peas, trimmed

1 pint cherry tomatoes, cut in half

1 tbsp chopped fresh basil

Method

  • Prepare linguini noodles according to package directions.

  • Drain.

  • In a large skillet, heat oil.

  • Add garlic, peppers, zucchini, and snow peas.

  • Stir-fry vegetables until tender.

  • Add drained pasta, cherry tomatoes, and basil.

  • Toss

  • Makes 4 servings.
