Orange-Gingerbread Muffins

Prepare there delicious muffins ahead and freeze them. When you are ready to serve them, just thaw at room temperature; to enjoy warm muffins, heat them in the microwave oven or toaster-oven before serving.

 

Ingredients:

2 1/4 cups all-purpose flour

1/2 cup firmly packed brown sugar

1 tbsp grated orange peel

1 12 tsp baking soda

1/2 tsp each ground ginger and ground cinnamon

1/8 tsp ground cloves

3/4 cup water

2 eggs, lightly beaten

1/4 cup dark molasses

1/4 cup each margarine and whipped butter, melted and cooled


Method

  • Preheat oven to 375 degree F.

  • In large mixing bowl combine flour, sugar, orange peel, baking soda, and spices; set aside.

  • In small mixing bowl thoroughly combine remaining ingredient; add to flour mixture and stir until mixture is moistened (do not beat or overmix).

  • Spray twelve 2 1/2-inch diameter muffin pan cups with nonstick cooking spray and fill each with an equal amount of batter (each will be about 3/4 full).

  • Bake in middle of center oven rack for 15 minutes (until muffins are brown and a toothpick, inserted in center, comes out of clean).

  • Invert muffins onto wire rack and let cool.
