Lentil Spaghetti

Ingredients:

8 ounces spaghetti noodles

1 tbsp oil

1/2 onion, chopped

2 garlic cloves, minced

1 cup dry lentils

1/2 tsp thyme

1/2 tsp salt

1/2 tsp red pepper flakes

1 tomato, diced

2 ounces feta cheese

2 tsp parsley

 

Method

  • Prepare spaghetti according to package directions.

  • Drain.

  • In a Dutch oven, heat oil.

  • Add onion and garlic.

  • Cook over medium heat for about 3 minutes.

  • Add the lentils and 1 1/2 cups of water.

  • Bring to a boil.

  • Add thyme, salt, red pepper flakes, and tomatoes.

  • Bring to boil again.

  • Reduce heat.

  • Simmer, uncovered, for 30 minutes until lentils are softened.

  • To serve, place spaghetti onto serving platter.

  • Top with lentils.

  • Sprinkle with feta cheese and parsley.

  • Makes 6 servings.
