Lentil Spaghetti
Ingredients:
8 ounces spaghetti noodles
1 tbsp oil
1/2 onion, chopped
2 garlic cloves, minced
1 cup dry lentils
1/2 tsp thyme
1/2 tsp salt
1/2 tsp red pepper flakes
1 tomato, diced
2 ounces feta cheese
2 tsp parsley

Method

Prepare spaghetti according to package
directions.

Drain.

In a Dutch oven, heat oil.

Add onion and garlic.

Cook over medium heat for about 3
minutes.

Add the lentils and 1 1/2 cups of
water.

Bring to a boil.
-
Add thyme, salt, red pepper flakes, and
tomatoes.

Bring to boil again.
-
Reduce heat.
-
Simmer, uncovered, for 30 minutes until
lentils are softened.

To serve, place spaghetti onto serving
platter.

Top with lentils.

Sprinkle with feta cheese and parsley.

Makes 6 servings.
