Kasha Varnishkes

Ingredients

1/2 cup each diced onion and sliced mushrooms

2 tsp margarine

2 cups water

1 1/2 ounces uncooked bow-tie macaroni

2 packets instant chicken broth and seasoning mix

2 ounces uncooked coarse-grain buckwheat (kasha)


Method

  • In 2-quart microwavable casserole combine vegetables and margarine and microwave on High (100%) for 2 minutes until vegetables are softened.

  • Add water, macaroni, and broth mix and stir to combine; microwave on High for 8 minutes, stirring halfway through cooking.

  • Stir in buckwheat groats, cover with vented plastic wrap, and microwave on High for 3 minutes, stirring after 2 minutes.

  • Let stand for 5 minutes, until water is absorbed.

Notes:

  • Although the term "kasha" generally refers to buckwheat groats, it is really an eastern European name for a grain pilaf. Buckwheat groats come in coarse, medium, and fine grinds

  • Use coarse grain groats for hearty dishes and medium or fine groats in recipes requiring a more delicate texture.
