Tired of potatoes? Give couscous a try. Here we have combined it with fruits and pignolias for a sweet side dish.
Ingredients 1/4 cup each diced celery and diagonally cut thinly scallions (green onions) 1 tbsp golden raisins 2 dried apricot halves, diced 1 ounce pignolias (pine nuts), toasted 2 tsp whipped butter 3/4 cup water 1/3 cup apricot or pear nectar 1/2 tsp curry powder 1 1/2 ounces uncooked couscous (dry precooked semolina) Garnish: mint sprig
