Couscous Pilaf

Tired of potatoes? Give couscous a try. Here we have combined it with fruits and pignolias for a sweet side dish.

 

Ingredients

1 small Granny Smith apple (about 1/4 pound), cored, pared, and diced

1/4 cup each diced celery and diagonally cut thinly scallions (green onions)

1 tbsp golden raisins

2 dried apricot halves, diced

1 ounce pignolias (pine nuts), toasted

2 tsp whipped butter

3/4 cup water

1/3 cup apricot or pear nectar

1/2 tsp curry powder

1 1/2 ounces uncooked couscous (dry precooked semolina)

Garnish: mint sprig


Method

  • In 1-quart microwavable shallow casserole apple, celery, scallions, raisins, apricot, pignolias, and butter and stir to combine.

  • Microwave on High (100%) for 2 minutes.

  • Add water, nectar, and curry powder and microwave on High for 3 minutes, until liquid is reduced.

  • Stir in couscous, cover with plastic wrap, and let stand until liquid is absorbed, about 5 minutes.

  • To serve, transfer to serving platter and garnish with mint.
