Cold India Pasta

Ingredients:

1/2 cup plain low-fat yogurt

2 tbsp plus 2 tsp instant nonfat dry milk powder

1 tbsp rice vinegar

1/4 tsp ground cumin

1/8 tsp pepper

1 1/2 cups cooked rigatoni or ziti macaroni

1/4 cup each finely diced radishes and celery

1 1/2 tsp minced scallion (green onion)

1 tsp each chopped fresh mint and cilantro (Chinese parsley) or Italian (flat-leaf) parsley


Method

  • Using wire whisk, in medium mixing bowl combine yogurt, milk powder, vinegar, cumin, and pepper and stir to thoroughly combine.

  • Add remaining ingredients and stir to coat.

  • Cover with plastic wrap and refrigerate until ready to serve.
