Breakfast Puffs

Ingredients

1 cup plus 2 tbsp all-purpose flour

1 tsp each ground cinnamon, divided, and doubleacting baking powder

1/4 cup granulated sugar, divided

1/4 cup less 1 tsp margarine

1 egg

1/3 cup skim or nonfat milk

1/2 ounce ground walnuts

1 tbsp whipped butter, melted


Method

  • Preheat oven to 350 degree F.

  • In small mixing bowl combine flour, 1/2 tsp cinnamon, and the baking powder; set aside.

  • Using electric mixer at medium speed, in medium mixing bowl combine 3 tbsp sugar, the margarine, and the egg and beat until creamy.

  • Alternately add flour mixture and milk, beating until combine.

  • Stir in walnuts.

  • Drop batter by tablespoonfuls onto nonstick baking sheet, forming 12 equal mounds, and leaving a space of about 2 inches between each.

  • Brush each mound with an equal amount of melted butter.

  • In cup or small bowl combine remaining tablespoon sugar and 1/2 tsp cinnamon and sprinkle an equal amount of sugar mixture over each mound.

  • Bake until puffed and golden, 12 to 15 minutes.

  • Remove puffs to wire rack and let cool.
