Barley with Mushrooms and Bacon

For crisp bacon in a hurry, cook it in the microwave oven. One slice of bacon is ready in about a minute.

 

Ingredients

1 tsp margarine

1/2 cup sliced mushrooms

1/4 cup finely chopped onions

1 1/2 ounces uncooked pearly barley

1 1/2 cups water

1 packet instant beef broth and seasoning mix

1 slice crisp bacon, crumbled

1/8 tsp pepper


Method

  • In 1-quart microwavable shallow casserole microwave margarine on High (100%) for 1 minute, until melted.

  • Add mushrooms and onion and microwave on High for 1 minute, until softened.

  • Add barley and stir to combine; microwave on High for 1 minute.

  • Add water and broth mix and stir to dissolve broth mix and stir to dissolve broth mix; microwave on High for 15 minutes, until liquid is absorbed and barley is tender, stirring every 5 minutes.

  • Stir in bacon and pepper.
