Banana-Pecan Farina

While cereal cooks, toast the shredded coconut.

 

Ingredients

1 1/2 cups water

1 1/2 ounces uncooked quick-cooking farina

Dash salt

1 medium banana (about 6 ounces), peeled and sliced

1/2 ounce shelled pecans, broken into pieces

2 tsp each shredded coconut, toasted, and firmly packed light brown sugar

1/4 cup skin or nonfat milk


Method

  • In small saucepan bring water to a boil; gradually stir in farina and salt.

  • Cook over medium heat, stirring constantly, until liquid is absorbed and mixture thickens, 2 to 3 minutes.

  • To serve, divide cereal into 2 cereal bowls; top each portion with half of the banana slices, pecans, coconut, sugar, and milk.
